Plantain is one of our staple foods eaten in west Africa, Pounded semi-ripe Plantain with Ox tail stew. The Ox tail is cooked till soft and almost falling off the bone then added to a pot with fresh onion, dry chilli , dry Bay leaves, crushed garlic, crushed ginger, star anise and fried in extra virgin olive oil for a few minutes , once done fresh tomatoes, tomato paste and some salt are added to finish off the stew.
